[Baking project] Red velvet cupcakes

Aritu aku dah pernah bagi resipi RV cake...resipi tu aku link direct drpd website JoyOfBaking...lepas beberapa kali buat, aku dah modified resipi tu...skrg prefer buat cuppies drpd cake...sbb cuppies senang skit hehe...ok ni dia resipi yg aku modified drpd original resipi...enjoy!


Red Velvet cupcakes:
2 1/2 cups (250 grams) all-purpose flour
1 tsp baking powder
1/2 teaspoon salt
2 tablespoons (15 grams) regular cocoa powder
1/2 cup (113 grams) butter, at room temperature
1 1/2 cups (300 grams) granulated white sugar
2 large eggs
1 teaspoon pure vanilla essence
*Pre-combine 240ml fresh milk or evaporated milk + 1 tbsp white vinegar or lemon juice, mix together, wait for 10 minutes before use
2 tablespoons liquid red food coloring
1 teaspoon white distilled vinegar
1 teaspoon baking soda

Cream Cheese Frosting: *thanks to Nina from NinazCakes for the recipe :)*
250g cream cheese
35g butter
110g sifted icing sugar

Method:
- Preheat oven to 180 degrees C and place rack in center of oven.
- In a mixing bowl sift together the flour, baking powder, salt, and cocoa powder. Set aside.
- In bowl of your electric mixer, or with a hand mixer, beat the butter until soft (about 1-2 minutes). Add the sugar and beat until light and fluffy (about 2-3 minutes). 
- Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl. 
- Add the vanilla extract and beat until combined.
- In a measuring cup whisk the pre-combined milk and vinegar with the red food coloring. 
- With the mixer on low speed, alternately add the flour mixture and the pre-combined milk and vinegar to the butter mixture, in three additions, beginning and ending with the flour.
- In a small cup combine the vinegar and baking soda. Allow the mixture to fizz and then quickly fold into the cake batter. 
- Working quickly, spoon the batter into the paper cups until ½ or 2/3 full (depends of the paper cups). 
- Bake in the preheated oven for approximately 25 minutes. Cool the cupcakes before pipe the frosting

Cream Cheese Frosting:
- In the bowl of your electric mixer, or with a hand mixer, beat the cream cheese and butter until smooth. 
- Add the vanilla and confectioner sugar and beat until smooth. 
Assemble: Pipe the frosting onto the cupcakes.
Serves: 12 medium-sized cups

  4. alo cik pah.. rajin sungguh siap ada swirly cream cheese.. yang cam red snow falling on top of the cream tuh amik crumbs ka apa? daku tak leh imagine..
